A temporary dishroom needs a clear sequence from dirty returns to clean racks. This low-temperature range includes push-through dishwashing, a soil tray, scraping table, three-compartment sink, and handwashing sink in 22ft, 24ft, and 26ft configurations.
Choose the offered length around rack handling, staff positions, and the space available at the site. The low-temperature process also needs a chemical-sanitation operating plan based on the installed machine, rather than an assumed output from trailer size.
Draw the dirty-to-clean route
Show where used dishes arrive, where scraping happens, and where clean racks leave. The sinks and scraping table support that sequence, but staff still need working space around each task.
Set up the chemical process with the machine
Include detergent, sanitizer, monitoring, incoming water, and drainage in the operating brief. Follow the installed machine’s instructions and chemical supplier’s directions, and request its model and rack-output rating.
