If ingredient replenishment is as important as cooking, the Mobile Combo deserves a closer look. It combines a walk-in cooler with fryers, a single-stack convection oven, griddle/oven combination, six-burner range/oven, preparation table, handwashing sink, and three-compartment sink.
Reach-in refrigerator and freezer storage are also part of the configuration. Plan how deliveries reach the cooler and how ingredients move to preparation; that route should work while the hot stations are occupied.
Make the cooler part of the receiving plan
Describe delivery sizes, delivery frequency, and the ingredients kept between services. Ask for the offered cooler’s dimensions, shelving, access, and usable storage so stock handling can be checked against the kitchen layout.
Separate the cooking choice from the combo label
The Mobile Combo’s single-stack oven differs from the Bulk Combo’s double-stack oven and tilting-skillet package. Compare those jobs against the menu. A three-compartment sink supports this kitchen, while a separate mechanical dishwashing trailer remains an additional requirement.
